🍄 Product description

Dried wood ear mushrooms from Totaco are a traditional dried mushroom used in Asian cuisine and other recipes from around the world. Wood ear mushrooms are prized for their unique texture – gelatinous to slightly crunchy when rehydrated – and their ability to absorb the flavours of other ingredients well.

Dried mushrooms have a long shelf life and are easy to store, making them ideal for keeping in stock at home or as an ingredient in a variety of dishes – from soups and stir-fries to salads and sauces.

  • Flavour: delicate, slightly earthy to neutral — it tends to absorb the flavours of other ingredients rather than dominate them.

  • Texture after rehydration: soft and gelatinous with a slight springiness; works brilliantly in soups and hot dishes.

  • Ingredients: 100 % dried wood ear mushrooms (also known as Auricularia auricula-judae).

  • Allergens: naturally free from most common allergens (gluten, milk, eggs), but always check the packaging – it may be packaged in a facility that handles other allergens.

  • Note: The product is intended for cooking after soaking – raw dried mushrooms are not usually eaten straight away.

💦 Preparation

  1. Soak the mushrooms in lukewarm or warm water for approx. 10–30 minutes until they soften.

  2. Drain and rinse thoroughly under running water.

  3. Use in soups, stir-fries, salads or other hot dishes. Remember to always cook them thoroughly before serving to ensure they are safe to eat.

  • Weight: 100 g of dried mushrooms – they will increase significantly in volume after soaking.

  • Store: in a dry, cool place away from direct light.

  • Country of origin: Vietnam (for most Totaco dried wood ear mushrooms).
